Richard Hennessy, an Irish officer who had emigrated to France, laid the foundation stone. In eight generations, the Hennessy distillery has been able to expand its craftsmanship and build a real treasure in the cellars. The eaux-de-vie are stored in them, the great vintages that, then as now, are used as the basis for the most outstanding products. In fact, only those who have fine eaux-de-vie at their disposal can create a great cognac. The finest Euax-de-vie from Hennessy are stored in the so-called Paradis cellar in barrels made from high-quality Limousin oak.
